Pike cutlets

I have a brother - the fisherman
And winter fishing is not alien to it too. Recently he caught pikes, several features and me fell intermittently
I cleaned them and decided to make cutlets

For this purpose cut a pike.
Forcemeat requires fillet of a small fish + fat + onions and crude potatoes is fresher.
I take everything "by eye", an approximate ratio of fish and fat 3/2

Passed everything via the meat grinder

Part of forcemeat removed in freezing, and added salt and ground black pepper to another. Well mixed and beat off.
I fry as usual cutlets. As a breading at me flour + semolina, 1/1
